Himmel und Äd (= Heaven and Earth)
This dish, which came to the Eifel from the Rhineland and became a kind of national dish there, consists of a potato and apple mash with roasted onions and fried black pudding. "Himmel und Äd" also exists in a modified form. In the Eifel, however, the most common version is mashed potatoes, black pudding/blootwoosch and apple sauce/apple sea. "Heaven and earth" is also known in other regions.
"Heaven and earth" is the name of the dish because the apples grow up in the sky and the potatoes come from the earth.
Ingredients:
- 500 g floury potatoes
- 500 g apples
- 100 g cream
- 1 vegetable onion
- 30 g sugar
- Lemon juice
- 1 ring of black pudding
- butter or clarified butter for frying
- Salt, pepper and nutmeg
Preparation:
Peel the potatoes and cut them into small pieces, peel the apples and also cut them into small pieces. Then first boil the potatoes in very little water until soft. Towards the end, add the diced apples, sugar and a little lemon juice and cook. After just a few minutes, you can mash the potatoes and apples together with the cream, pepper and grated nutmeg. Cut the onion into fine rings and fry in butter or clarified butter. Then slice the black pudding and fry until crispy on both sides. Pour the roasted onion rings over the mashed potatoes and serve with the black pudding. Sometimes, rendered bacon is added on top of the mashed potatoes. Certainly not for the slim line, but very tasty.
