Riefkooche (Potato pancake)
Kröbbelche, Riefkooche, Reibekuchen or Kartoffelpuffer are an integral part of Eifel cuisine. They are easy and quick to make and taste like home. In the Eifel, they are preferably eaten with apple sauce. But they also go great with smoked salmon.
Ingredients:
- 700 g potatoes
- 52 g onion
- 3 eggs
- 40 g oat flakes
- 10 g salt
- a little whipped cream
- nutmeg and pepper to taste
Preparation:
Grate the potatoes and onion preferably by hand, salt them and let them stand for a while.
Squeeze the potato mixture well. Drain off the water that now comes out of the potatoes. Leave the white starch that has settled at the bottom of the bowl.
Add the remaining ingredients and spices and mix everything together.
Heat a pan with oil (about the thickness of a finger). Pour in the potato mixture in batches and fry until crispy and lightly floating in the fat. Thin or thicken according to taste.
